Preparation
1
Pat the chicken fillets dry. Season with salt and pepper. Heat the oil and butter in a deep frying pan or shallow roasting dish. Fry the chicken fillets for 3–4 minutes per side.
2
Peel and finely dice the onion and garlic. Remove the chicken from the pan. Sauté the onion and garlic in the hot frying fat for about 1 minute. Sprinkle with paprika and sauté briefly. Stir in the stock and cream, stirring constantly, and bring to a boil. Finely chop the soft tomatoes. Add them to the sauce along with the chicken. Simmer for about 10 minutes.
3
Cook the pasta in boiling salted water according to the package instructions. Wash the broccolini, add it to the pasta about 3 minutes before the end of the cooking time, and cook. Drain the pasta and broccolini. Add the broccolini to the chicken and heat it through. Wash and chop the parsley. Serve the chicken with the sauce and pasta. Sprinkle the chicken pan with parsley.
