  • Pasta (like pappardelle, rigatoni, or fettuccine) or mashed potatoes (for serving)
Instructions:
  1. Prepare the Meat:
    • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
    • Season the beef or pork with salt and pepper, and brown the meat in batches until it's deeply caramelized on all sides (about 8–10 minutes). Remove the meat and set it aside.
  2. Sauté the Vegetables:
