Pea patties with feta
Our pea patties with feta are not only quick to prepare, but also popular with children. A delicious and healthy meal that will make young and old happy.

Ingredients
For 4 Persons
250 g Frozen peas
Salt
approx. 2 Spring onions
150 g Feta
200 g Sour cream
2 Egg yolk (size M)
grated zest of 1 Organic Lemon
75 g Breadcrumbs
Pepper
4 stems Mint
300 g Greek yogurt
Sugar
approx. 3 tbsp Oil
Preparation
1 Simmer frozen peas in boiling salted water for about 3 minutes. Drain, rinse and drain well. Wash the spring onions and cut into fine rings. Cut the feta into fine cubes. Knead the peas, sour cream, feta, egg yolks, half lemon zest and breadcrumbs. Season with salt and pepper.
2 Wash and finely chop the mint. Mix with the yoghurt and remaining lemon zest. Season with salt, pepper and 1 pinch of sugar. Form about 20 patties from the pea mixture with moistened hands. Heat the oil in a non-stick pan. Fry the patties in portions for 2-3 minutes per side. Keep the patties warm. Serve patties with mint yoghurt.
