Quick pizza bruschetta
Aromatic, fruity bruschetta and crispy pizza: when two of our favorite Italian classics come together, the result is a real delicacy!

Ingredients
For 4 Persons
1 roll Pizza dough (approx. 400 g, refrigerated shelf)
Flour for the work surface
4 tbsp olive oil + some for garnish
2 Scallions
2 Garlic
700 g Tomatoes
1 scoop Mozzarella (approx. 125 g)
Salt
Pepper
3 stems Basil
possibly balsamic cream
Preparation

For the pizza bases Remove the pizza dough from the fridge about 10 minutes before preparation. Unroll the dough, remove baking paper and divide into 4 equal pieces. Knead each piece briefly and shape it into an oval flatbread (approx. 15 x 25 cm) with both hands on a lightly floured work surface.

Place the dough flatbreads next to each other on a baking tray lined with baking paper. Brush with 4 tablespoons of olive oil and bake in a preheated oven at 250 °C (top/bottom heat) for 15 minutes until crispy and golden brown.

In the meantime, for the bruschetta topping Peel and chop the shallots and garlic. Wash the tomatoes, remove the stem and cut into small cubes. Drain the mozzarella and cut into cubes of the same size. Put all ingredients in a large salad bowl. Roughly chop 5-6 basil leaves and add them. Season with salt and pepper and mix thoroughly.

Remove the pizza bases from the oven and allow to cool briefly. Spread the tomato mixture over the flatbread with a tablespoon. Garnish with a little olive oil and fresh basil leaves. Refine with balsamic cream if desired.
