Sheet Pan Salmon with Roasted Vegetables

​Sheet Pan Salmon is a simple, healthy, and delicious one-pan meal that’s perfect for busy weeknights. Featuring juicy, flaky salmon fillets baked alongside roasted asparagus and cherry tomatoes, this dish is packed with flavor and nutrition. A drizzle of garlic butter sauce and a squeeze of fresh lemon make this meal extra tasty, while keeping everything light and fresh.

Ingredients: (Serves 2-3)

For the Salmon:
2 salmon fillets (6 oz each)
1 tbsp olive oil
1 tbsp lemon juice (freshly squeezed)
2 cloves garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp dried thyme or oregano
1 tbsp butter, melted
Lemon slices (for garnish)
For the Vegetables:
1 bunch asparagus, trimmed
1 cup cherry tomatoes, halved
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper

Instructions:

1️⃣ Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2️⃣ Prepare the salmon: Place salmon fillets on the baking sheet. In a small bowl, mix olive oil, lemon juice, garlic, salt, pepper, paprika, and dried thyme. Brush this mixture over the salmon.
3️⃣ Prepare the veggies: In a bowl, toss asparagus and cherry tomatoes with olive oil, salt, and pepper. Arrange them around the salmon on the baking sheet.
4️⃣ Bake the salmon: Roast in the oven for 12-15 minutes or until the salmon flakes easily with a fork.
5️⃣ Drizzle with butter: Remove from the oven, drizzle melted butter over the salmon, and garnish with fresh lemon slices and herbs.
